1. Brinjal Kacheri

Ingredients: ½ cup gram flour, 3-4 tbsp oil, ½ cup buttermilk, ½ tsp turmeric powder, ½ tsp coriander powder, 2 brinjal Kateri, ¼ tsp garlic powder, salt, ½ tsp red pepper powder


Cooking Steps:
 Take 2 cups of water in a big bowl and dip disks of brinjal kateri in water and keep them in the other bowl.

In another bowl, add buttermilk and salt. Now dip those disks of Brinjal in the buttermilk and now again keep them aside.

Now add gram flour and all spices (according to the ingredients) in a bowl and double coat the brinjal slices. On the other hand, heat the pan and fry till it gets crisp and turn golden from both sides.

2. Stuffed Baby Brinjal Kateri

Ingredients: Cashew nuts, red chili, salt, tamarind pulp, oil, Brinjal


Cooking Steps:
 You need to cut the Brinjal from the centre, add red chili, salt, cashew nuts, tamarind, and then put that in the gravy of onion-tomato.

Leave it for 5-7 minutes on a medium flame, and your dish is ready to serve.
