Carrot is one of the popular winter vegetables that is loved by most Indians. This vegetable receives its red colour from lycopene pigment. It is crunchy and sweet in taste. While buying the carrots, avoid taking the cracked ones. The best way to get all the nutrients of the carrot red is to eat raw.
Ingredients: Six medium-sized tomatoes, two red carrots, one small beetroot, one tsp cream, three tsp sugar, and salt according to the taste, black pepper
Cooking Steps: First, cut the tomatoes and peel the other vegetables (carrot and beetroot). Now put all these vegetables in a pressure cooker till it takes three whistles. Let it cool down, then blend and sieve. Now put the sugar, black pepper, and salt and let it get boiled for five minutes. In the end, add some cream while serving.
2. Gajar Halwa
Ingredients: One and a half kg carrots, ten cardamoms, two cinnamon sticks, 500 gms sugar, 250-300 gms desi ghee, 400 gms condensed milk, 50 gms almonds, and pistachios
Cooking Steps: Firstly, grate the carrot and heat and fry it continuously in a pan so that all the water of the carrot gets dry. Now add green cardamom, cinnamon, and sugar and cook it well. After eight-ten minutes, add desi ghee to it.
After that, garnish it with condensed milk or khoya. While serving add some pistachios and almonds to present.
