Coriander leaves are also known as Coriandrum sativum, cilantro and are used to flavour various dishes. It is also common by the names Chinese parsley and Dhania. It is found in Indian kitchens and is used as a garnish or a key ingredient in various dishes.
Every 16 grams of cilantro provides:
Ingredients: 2 cups chopped coriander leaves, 8 garlic pods 1 ½ cup of water, 2 cups gram flour, 1 tsp turmeric powder, cumin seeds, 1tbsp rice flour, 1inch ginger, 8 green chilies, oil and salt as per taste
Cooking steps: Firstly, wash the coriander leaves and then chop them and keep them aside. Prepare a ginger garlic paste by adding chilies into it. Take one bowl and mix rice flour, gram flour, and salt in it. Next, add a paste of it by pouring water. Now take a pan and heat oil. Add some turmeric powder, ginger garlic chili paste and cumin seeds, stir and add chopped coriander leaves and sauté them. Add chickpea flour mixture into it and stir the mixture. Now turn off the flame and take a silver foil. Spread the chickpea coriander leaves mix on the foil and pat it with fingers. Now let it cool down and cut it evenly into square shapes.
Now again, heat the pan and add some oil into it. Now add the square pieces into the pan and fry till it becomes crisp. Now let it cool down and serve it.2. Coriander Chutney
