Corn or maize finds its roots in Southern Mexico, and now different types of corn dishes are enjoyed in several parts of the world. It belongs to the family of Poaceae. It is one of the most popular cereal grains. Its colour is yellow but is also available in red and orange colour. It has bioactive content that helps in boosting your health.
1. Corn Cutlet
Ingredients: ½ cup ground flattened rice (poha), 1 cup ground corn, 2 finely chopped green chilli, 1 tsp ginger paste, 1 tsp cumin powder, 1 mashed potato, ½ tsp coriander powder, ½ tsp red chilli powder, ¼ tsp chat masala, 1 tsp finely chopped coriander leaves, 3 tbsp all-purpose flour, vermicelli, and salt
Cooking Steps: Mix all the ingredients (except for all-purpose flour and vermicelli) thoroughly. Prepare balls of the mix and flatten them. Meanwhile prepare a thick paste by mixing all-purpose flour, some salt, and water. Dip the cutlets into the all-purpose flour paste and then coat them with vermicelli. Deep fry this cutlet in a pan. Corn cutlets are ready to be served.
2. Cheese corn balls
Ingredients: 1 mashed potato, 2 tbsp corns, 2 tbsp capsicum, 1 tsp coriander leaves, ½ cup mozzarella cheese, ½ tsp chilli flakes, ½ tsp basil, ½ tsp black pepper powder, 2 tsp cornflour, 2 tbsp all-purpose flour, 2 tbsp bread crumbs, and salt to taste
Cooking Steps: Mix all the ingredients well (do not mix all-purpose flour and bread crumbs in this mixture.) Grease your hands with oil and make small balls out of the dough. Prepare a thick paste by mixing all-purpose flour, salt, and water. Coat the balls with the paste and apply bread crumbs over it. Deep fry the cheese corn balls and serve them on any occasion.
