Overview:
Cucumber is a vegetable that comprises 95% water, which is cylindrical and about sixty-two to ten centimetres in diameter. You can find three main varieties of cucumber- pickling, slicing, and seedless. It is one of the cool and refreshing vegetables and mainly eaten as a salad on hot summer days.

1. Cucumber Salad
Ingredients: cucumber, white vinegar, sugar, water, salad, olive oil, basil, parsley, salt and pepper as per taste
Cooking Steps: Firstly, peel the cucumber and cut them in half according to the length. Then scoop the seeds from the cucumber and cut into the half rings. Now add a quarter cup of vinegar, 1 tbsp sugar, and water in a bowl. Leave it for a few hours.
Drain the cucumbers from the bowl and keep it in another plate. Add one spoon olive oil, basil, parsley, a pinch of salt, and black pepper. Serve and enjoy!
2. Cucumber Soup
Ingredients: 2 chopped cucumbers, 1 tbsp yogurt, 8 chopped mint leaves, 1 garlic clove, 2 tsp lemon juice, salt and black pepper, cheese, bread
Cooking Steps: Firstly, blend the chopped cucumber with the help of a mixer and then add yogurt, mint, garlic, lemon juice, and black pepper, and blend it again. Put this mixture in the fridge.
Now shallow fry the cubes of bread and drain them. Grate some cheese and toss. Add the chilled cucumber soup in a bowl and garnish it with some chopped cucumber and serve.
