Recipes

 

1. Mango Kesari/Mango Halwa

Ingredients: 1 large-sized chopped mango, 1/3 cup of sugar, 1pinch saffron, 3 green cardamoms, 3tbsp ghee, ½ rava, 12 cashews, ½ tbsp. raisins and 1 ½ cut water

 

Cooking Steps: First make a purée of mago. Blend the chopped mangoes in a blender and add sugar, saffron, and cardamoms to it. Keep the mixture aside.

Now add ghee and water to the pan one by one on a low flame. Wait till it gets hot. Roast rava and cashews by stirring well. When you see the rava is roasted finely, add hot water and stir it well on a low flame and cover the pan for two minutes.

Now you can serve mango Kesari warm or cool, depending on your choice.

2. Mango Ice Cream

Ingredients: 2 cups whipping cream, 2 large mangoes, ½ vanilla extract, ½ cup jaggery or honey

Cooking Steps: Blend the chopped mangoes by adding vanilla extract and sugar to it. When soft peaks are formed, whip the cream. Now pour the mixture in a container and freeze it. Take out the ice cream from the freezer when it is half frozen and whisk again. Now again freeze it and enjoy it.
