Ingredients: Organic green capsicum, corn, jalapenos, black beans, cheddar cheese, onions, garlic, olive oil, Panko breadcrumbs, lime juice, fresh coriander leaves, and salt

 

Cooking Steps: Cook the black beans and keep them aside. Heat olive oil in a pan and saute the chopped onion and garlic. Add some corn, jalapenos, and lime juice. Mash the cooked black beans and add them to this mixture in the pan. Add salt and mix. Take it of heat. Add coriander leaves and breadcrumbs. Blend the mixture well. Slit the capsicum in the center, and remove the pith and seeds. Stuff the mixture in the capsicum and top it with cheddar cheese. Sprinkle some olive oil over it and bake for about 10 minutes at 220 degrees Celsius.
